Case study: Farmer x Baker

2020 - 2023

In 2020, Farmer x Baker was a shipping container restaurant in a public park, selling specialty farm to table seasonal dishes and an original recipe organic local grain bagel. Napkin LLC joined on in 2020 to help increase bagel production, and improve restaurant systems so that the company could serve more customers. By 2021, FxB staff and sales doubled, and the company added a second location to further increase production capacity. FxB expanded into wholesale and catering in 2022. Napkin also designed and manages the company website (linked above).

Case study: Breads Bakery

2016

In 2016, Breads Bakery was establishing itself as an essential and growing NYC bakery and cafe. For the launch of its new location in Manhattan, Breads wanted to reintroduce a lost local favorite cake. Maura resurrected the recipe and planned the production. She built a team, created the baking schedule, and managed the delivery process. While the company generated hype and increasing demand, Maura ensured customers at multiple locations were able to taste the Concord Cake.

Case study: River Monster Pizza

2021

River Monster Pizza began in 2021 as a wood fired handcrafted pizza truck, serving customers on the scenic Allegheny riverbank. Napkin LLC helped RMP hire their first employees and plan their management strategy. Napkin helped RMP connect with local produce vendors. And the two companies worked together to expedite the customer ordering experience. In 2022, RMP is running pizza pop-ups and getting ready to expand business and serve more customers.

Case study: Napkin Donuts

2020

There is no shortage of donut businesses in Pittsburgh, PA. For a NY-born connoisseur, apple cider donuts are a necessity in the autumn months, but are little known in Pittsburgh. Napkin LLC developed a cider donut recipe and introduced it to the Pittsburgh community at the Lawrenceville Farmer's Market. In the course of one year, demand for the donuts supported 8 market days and 3 pop-up shops. The donuts gained a local following and turned a profit. Napkin Donuts now appear by request at pop ups around the city.
